Coconut Rice

Rice cooked in coconut milk. Not to be confused for Good Friday congee.

Ingredients

  • Coconut milk 2 cups
  • Rice, soaked 1ยฝ cups
  • Ghee 2 tablespoons
  • Cloves 4-5
  • Black peppercorns 6-8
  • Onion , sliced 1 medium
  • Sugar 1 tsp
  • Salt to taste

Instructions

  1. Heat ghee in a deep pan. Add cloves, black peppercorns and onion. Sautรฉ till onion starts turning light brown.
  2. Add sugar and sautรฉ till it caramelizes a little.
  3. Add drained rice and stir gently so that the rice grains do not break.
  4. Add coconut milk and one cup of water and stir. (for 1ยฝ measure of rice)
  5. When the mixture comes to a boil, add salt and boil for five minutes.
  6. Cover and cook on medium heat till done.
  7. Remove from heat and allow to rest for five minutes. Serve hot.

Notes

This rice tastes good with ball curry (mince kofta).
