Coconut Rice
Rice cooked in coconut milk. Not to be confused for Good Friday congee.
Ingredients
- Coconut milk 2 cups
- Rice, soaked 1ยฝ cups
- Ghee 2 tablespoons
- Cloves 4-5
- Black peppercorns 6-8
- Onion , sliced 1 medium
- Sugar 1 tsp
- Salt to taste
Instructions
- Heat ghee in a deep pan. Add cloves, black peppercorns and onion. Sautรฉ till onion starts turning light brown.
- Add sugar and sautรฉ till it caramelizes a little.
- Add drained rice and stir gently so that the rice grains do not break.
- Add coconut milk and one cup of water and stir. (for 1ยฝ measure of rice)
- When the mixture comes to a boil, add salt and boil for five minutes.
- Cover and cook on medium heat till done.
- Remove from heat and allow to rest for five minutes. Serve hot.
Notes
This rice tastes good with ball curry (mince kofta).
