Sweet Chops

Ingredients

  • Meat ยผ kg
  • Onions 4 medium
  • Tamarind 1 lump (about a Tbsp or a little lesser also would do)
  • Cumin/Jeera powder 1 tsp
  • Chillie powder ยฝ tsp
  • Turmeric powder ยผ tsp
  • Ginger-garlic paste ยผ tsp
  • Cardamom 2
  • Cinnamon 2 sticks
  • Cloves 4-5
  • Vinegar 2 tsp
  • Sugar 1 tsp
  • Salt to taste
  • Oil 2-3 Tbs

Instructions

  1. Remove the skin from the onions and make 3-4 slits on the sides of the onions. Coat lightly with oil. Place these onions on the gas-stove burner and let it roast. You can use a fork to hold on to the onions while turning it round to roast evenly. The onion should turn light pink from inside and open up slightly. Basically it should look cooked. After all the onions are roasted, let it cool. Discard the blackened skin and grind the remaining onion into a paste.
  2. Heat oil the cooker and add the onions. Let it fry for 1 minute.
  3. Then add the ginger-garlic paste. Let it fry for another minute.
  4. Add the powdered spices, chillie powder, Turmeric powder, salt and Tamarind. Let it fry for some time.
  5. Then add the meat and fry it briefly in the onion paste.
  6. To this add 1 cup of water and let the meat cook for 4-5 whistles in the pressure cooker and switch off the heat.
  7. After the steam in the cooker settles down, remove the lid. Light the gas and add the cumin powder to the meat. Add the sugar and vinegar at this stage and let it dry till lightly browned at the bottom.

Notes

  • You need to add a little sugar to get out the tangy taste of the onions.
  • This curry tastes good with phulka.
  • The curry will have a chocolate colour.ย  But be sure to add the Turmeric powder, if not you will not get the actual colour. ย 
  • Remove the blackened and burnt skin of the onion before grinding.
  • The sugar does the trick of altering the taste of the curry.ย  Taste the curry before and after adding the sugar, then you will make out the difference.
  • The onions can be heated in the microwave oven for 2 minutes to soften (i.e. after slightly roasting on the gas)
