Spicy Prawn Fry

Ingredients

For grinding

  • Ginger 2 inch piece (cleaned)
  • Green chillies 3
  • Curry leaves 10-15
  • Water 1 cup

For frying

  • Prawns 250 gms (Shelled, deveined and wasthed thoroughly)
  • Turmeric ยฝ tsp
  • Chillie powder 2-3 tsp
  • Green chillies 2 (slit)
  • Curry leaves 10-15
  • Salt 1 tsp
  • Oil 4-5 Tbsp

Instructions

  1. Grind ginger, green chillies and curry leaves, along with turmeric, chillie powder and salt to a fine paste.
  2. In a heavy based kadai/wok combine the masala paste with water and let it come to a simmer.
  3. Add the prawns to the water and let it cook for 10 minutes. At this stage please note that the oil is not added. Let the prawns cook in the water itself until it is tender,
  4. Then increase the heat and boil the liquid until it turns thick and reduces.
  5. When most of the liquid has evaporated then drizzle oil on the prawns and mix it well.
  6. At this stage add the curry leaves and slit green chillies and give it another 5 minutes to fry.

Notes

Prawns become tough if over cooked.ย  15 minutes is enough to cook it properly.
