Vegetable Stuffing
Ingredients
- Carrots 3 (chopped into small pieces)
- Green beans (stew beans) 150 gms (chopped into small pieces)
- Potatoes 2 big size (chopped into small pieces)
- Cauliflower 1 medium (chopped into small pieces)
- Green peas 100 gms
- Onion 1 big (chopped)
- Pudina leaves (mint) 3 Tbsp (chopped)
- Green chillies 3-4 (chopped)
- Spice powder Cloves-4 to 5, Cinnamon-2 inch pieces, Cardamom-4 (to be coarsely ground)
- Ginger garlic paste 1 tsp
- Bread 3-4 slices (cut into cubes)
- Turmeric powder ยฝ tsp
- Vinegar 2 Tbsp
- Oil 3 Tbsp
- Oil To shallow fry the bread cubes
- Water ยฝ cup
- Salt 1 tsp
Instructions
- Thoroughly wash all the above vegetables and chop it into small pieces
- In a wok/kadai add the oil for frying the bread cubes. Once the oil warms up, add the bread cubes and fry until golden brown. Remove the bread and keep it aside until required.
- Remove the excess oil from the kadai/wok after frying the bread cubes.
To this add the onions, green chillies and spice powder. Fry it until the onions turn pink. Let the heat be on medium. - Add the ginger garlic paste and fry for a minute. Now add the chopped pudina and fry for 5 seconds. Add the turmeric and mix well.
- Add all the chopped vegetables and mix thoroughly. Add the salt and water.
- Cover the kadai and allow it to cook for 8-10 minutes. Check to see if the vegies are cooked. Make sure that all the water has dried up during the cooking.
- Add vinegar to the vegetables and higher the stove to dry up the water, if any. A little bit of browning of the vegetables would have a nice taste to the stuffing.
- Switch off the stove and sprinkle the fried bread cubes on the stuffing before serving.
Notes
Left over stuffing can be used as a filling in bread slices that are dampened. Shape like rolls and deep fry.ย Can accompany this bread rolls with Tomato ketchup. ย
This stuffing can be used for filling a chicken or duck and roasting it.
