Pancakes
Ingredients
- Maida 2 cups
- Sugar ยผ cup + 1 tsp
- Baking powder 4 tsp
- Baking soda ยผ tsp
- Milk 1ยพ cup (440 ml)
- Butter ยผ cup (melted)
- Egg 1
- Vanilla essence 1 tsp
- Salt ยผ tsp (skip if your using salted butter)
Instructions
- Combine together the flour, sugar, baking powder, baking soda and salt in a large bowl.
- Make a well in the centre and add the milk and slightly cooled melted butter, vanilla essence and egg.
- Use a wire whisk to whisk the wet ingredients together, first slowly folding them into the dry ingredients. Mix together until smooth. There should be no lumps at all.
- The batter will be thick and creamy in consistency. If the batter is too thick and doesnโt pour off the ladle, add in a couple of tablespoons of extra milk into the batter and whisk again.
- Now set the batter aside and let it rest for some time (about 10 minutes).
- Heat a nonstick pan over low-medium heat and wipe over with a little butter to lightly grease the pan.
- Pour a small ladle or ยผ cup or the batter onto the pan and spread out gently into a circle with the back of the ladle.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden.
- Repeat with remaining batter.
Notes
Serve these pancakes with honey, maple syrup, fruit, ice cream or frozen yoghurt, chocolate syrup, Nutella or fruit crush.
