Pancakes

Ingredients

  • Maida 2 cups
  • Sugar ยผ cup + 1 tsp
  • Baking powder 4 tsp
  • Baking soda ยผ tsp
  • Milk 1ยพ cup (440 ml)
  • Butter ยผ cup (melted)
  • Egg 1
  • Vanilla essence 1 tsp
  • Salt ยผ tsp (skip if your using salted butter)

Instructions

  1. Combine together the flour, sugar, baking powder, baking soda and salt in a large bowl.
  2. Make a well in the centre and add the milk and slightly cooled melted butter, vanilla essence and egg.
  3. Use a wire whisk to whisk the wet ingredients together, first slowly folding them into the dry ingredients. Mix together until smooth. There should be no lumps at all.
  4. The batter will be thick and creamy in consistency. If the batter is too thick and doesnโ€™t pour off the ladle, add in a couple of tablespoons of extra milk into the batter and whisk again.
  5. Now set the batter aside and let it rest for some time (about 10 minutes).
  6. Heat a nonstick pan over low-medium heat and wipe over with a little butter to lightly grease the pan.
  7. Pour a small ladle or ยผ cup or the batter onto the pan and spread out gently into a circle with the back of the ladle.
  8. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden.
  9. Repeat with remaining batter.

Notes

Serve these pancakes with honey, maple syrup, fruit, ice cream or frozen yoghurt, chocolate syrup, Nutella or fruit crush.
