Poha
Ingredients
- Beaten rice (poha) 1 cup
- Groundnuts 1/4 cup
- Fresh coconut (optional) ยผ cup (grated)
- Coriander leaves ยผ cup
- Curry leaves 1 stalk (chopped)
- Sugar ยผ tsp
- Salt ยผ tsp or according to taste
- Green chillies 4-5
- Lime juice 1 tsp
- Oil 1 ยฝ Tbsp
- Onions 2 (chopped)
- Potato 1 small (chopped)
- Cumin & mustard seeds ยฝ tsp each
Instructions
- Wash poha until the water runs clean. Drain water sprinkle a handful of clear water and keep aside.
- After 15 minutes loosen the poha gently, and break up the lumps. Keep it aside.
- In a kadai, heat oil, add cumin and mustard seeds. Allow them to splutter and then add the chopped potatoes. Stir for a minute.
- Now add the onions, green chillies and curry leaves. Stir and fry onions till tender and the potatoes are cooked.
- Switch off the stove. Add the poha and other ingredients. Save some coconut and coriander leaves for garnishing finally.
- Stir all the ingredients very well.
- Adjust salt and lime as per taste. Return to low flame till hot. Stir gently every now and then.
- Transfer to serving dish and garnish with coriander and coconut.
