Kulkuls are a staple Anglo Indian Christmas sweet.

Ingredients

Kulkuls

  • Maida โ€“ 1 kg
  • Eggs โ€“ 6 (yolk & white)
  • Sugar โ€“ ยฝ kg
  • Coconut โ€“ 1
  • Vanilla essenceโ€จDalda โ€“ 100 g
  • Oil โ€“ for deep frying

Treacle

  • Sugar โ€“ 250 gms
  • Water – ยฝ cup
  • Vanilla essence โ€“ 1tsp

Instructions

  1. Grate the coconut and grind to a smooth paste.
  2. Mix all the ingredients into a soft dough.
  3. Using forks that are dabbed on the back with dalda/ghee/butter, take a small lump of dough and spread evenly. Roll from the edge of the fork all the way to the front with the thumb to form a curl. Seal the edges firmly.
  4. Make all the kulkuls till the dough is exhausted. Then put on oil in a big kadai and let it heat up. Once the oil is hot, put in the kulkuls for frying. Fry till golden brown and then remove from oil.
  5. Keep it aside to cool until the treacle is prepared.
    For the treacle:
  6. boil all the ingredients until the sugar has melted and the syrup becomes a little thick. Then switch off the fire.
  7. Add the fried kulkuls to the treacle and mix well until each kulkul is coated with the sugar syrup.
  8. Allow it to cool.
  9. The treacle will ultimately thicken as a coating on the kulkuls. Color can be added to the treacle syrup if required.
