Christmas Cake

Ingredients

  • Butter โ€“ ยฝ cup
  • Cooking oil โ€“ ยฝ cup
  • Brown sugar โ€“ 1 cup
  • Eggs โ€“ 3
  • Rum โ€“ 3 Tbsp (can be substituted with pulpy orange juice)
  • Nuts โ€“ ยฝ cup
  • Mixed fruits โ€“ 250 g
  • All-purpose flour โ€“ 2 cups
  • Ground almond โ€“ 75 g (optional) All-purpose flour can be substituted
  • Baking powder โ€“ 1 tsp
  • All spice โ€“ 1 tsp
  • Cinnamon powder โ€“ 1 tsp
  • Ginger powder โ€“ 1 tsp
  • Caramelized corn syrup โ€“ 3 Tbsp
  • Salt โ€“ ยฝ tsp

Instructions

  1. Preheat oven to 160ยฐC for 5 minutes
  2. Butter or spray an 8โ€ pan. Line the bottom with parchment paper. Also line the sides of the pan. Keep about 2 inches above the rim of the pan.
  3. Whisk together, flour, ground almond, salt, all spice, cinnamon, ginger powder and baking powder.
  4. Toss the mixed fruit with 3-4 Tbsp of flour mixture (to avoid sticking).
  5. Beat the butter and oil in an electric mixer. Add the sugar and beat again. Add eggs one at a time.
  6. Add the alcohol.
  7. Add the caramelized corn syrup.
  8. Fold in the nuts and dry fruits.
  9. Then add the flour and mix thoroughly. Donโ€™t over mix.
  10. Bake for 80-90 minutes or when skewer inserted comes out clean.
