Christmas Cake
Ingredients
- Butter โ ยฝ cup
- Cooking oil โ ยฝ cup
- Brown sugar โ 1 cup
- Eggs โ 3
- Rum โ 3 Tbsp (can be substituted with pulpy orange juice)
- Nuts โ ยฝ cup
- Mixed fruits โ 250 g
- All-purpose flour โ 2 cups
- Ground almond โ 75 g (optional) All-purpose flour can be substituted
- Baking powder โ 1 tsp
- All spice โ 1 tsp
- Cinnamon powder โ 1 tsp
- Ginger powder โ 1 tsp
- Caramelized corn syrup โ 3 Tbsp
- Salt โ ยฝ tsp
Instructions
- Preheat oven to 160ยฐC for 5 minutes
- Butter or spray an 8โ pan. Line the bottom with parchment paper. Also line the sides of the pan. Keep about 2 inches above the rim of the pan.
- Whisk together, flour, ground almond, salt, all spice, cinnamon, ginger powder and baking powder.
- Toss the mixed fruit with 3-4 Tbsp of flour mixture (to avoid sticking).
- Beat the butter and oil in an electric mixer. Add the sugar and beat again. Add eggs one at a time.
- Add the alcohol.
- Add the caramelized corn syrup.
- Fold in the nuts and dry fruits.
- Then add the flour and mix thoroughly. Donโt over mix.
- Bake for 80-90 minutes or when skewer inserted comes out clean.
