Dry Bhindi Fry
Ingredients
- Ladyโs finger 4 cups (cut into ยฝ inch pieces)
- Oil For deep frying
- Garlic 2 tsp (finely chopped)
- Onions ยฝ cup (sliced)
- Tomatoes ยฝ cup (chopped)
- Chillie powder 1 tsp
- Turmeric powder ยฝ tsp
- Garam masala 1 tsp
- Amchur powder (optional) 1 tsp
- Lemon juice 1 tsp
- Coriander leaves 1 Tbsp (finely chopped)
- Salt According to taste
Instructions
- Heat oil in a kadai for deep frying. Fry the chopped ladyโs finger in the oil for 2 minutes. Remove from the oil and place on an absorbent paper to soak up the excess oil.
- Retain only 2 Tbsp of oil in the kadai and store the remaining oil for other cooking purposes.
- In the oil, saute the garlic on a medium flame for 15 seconds.
- Now add the onions and saute on a medium flame for 1 to 2 minutes
- Add the tomatoes, chillie powder, turmeric powder, garam masala, amchur powder and salt and mix well and cook on a medium flame for 1 to 2 minutes while stirring continuously.
- Add the deep fried ladyโs finger and mix well. Saute for 2 to 3 minutes.
- Drizzle the lime juice and mix the ingredients.
- Finally sprinkle the chopped coriander leaves and switch off the heat.
- Serve the curry with rotis.
Notes
Good accompaniment for lime rice too.
