Dry Bhindi Fry

Ingredients

  • Ladyโ€™s finger 4 cups (cut into ยฝ inch pieces)
  • Oil For deep frying
  • Garlic 2 tsp (finely chopped)
  • Onions ยฝ cup (sliced)
  • Tomatoes ยฝ cup (chopped)
  • Chillie powder 1 tsp
  • Turmeric powder ยฝ tsp
  • Garam masala 1 tsp
  • Amchur powder (optional) 1 tsp
  • Lemon juice 1 tsp
  • Coriander leaves 1 Tbsp (finely chopped)
  • Salt According to taste

Instructions

  1. Heat oil in a kadai for deep frying. Fry the chopped ladyโ€™s finger in the oil for 2 minutes. Remove from the oil and place on an absorbent paper to soak up the excess oil.
  2. Retain only 2 Tbsp of oil in the kadai and store the remaining oil for other cooking purposes.
  3. In the oil, saute the garlic on a medium flame for 15 seconds.
  4. Now add the onions and saute on a medium flame for 1 to 2 minutes
  5. Add the tomatoes, chillie powder, turmeric powder, garam masala, amchur powder and salt and mix well and cook on a medium flame for 1 to 2 minutes while stirring continuously.
  6. Add the deep fried ladyโ€™s finger and mix well. Saute for 2 to 3 minutes.
  7. Drizzle the lime juice and mix the ingredients.
  8. Finally sprinkle the chopped coriander leaves and switch off the heat.
  9. Serve the curry with rotis.

Notes

Good accompaniment for lime rice too.
