Spicy Prawn Fry

Ingredients
To be Ground into a coarse paste
- Ginger 2-inch piece (cleaned)
- Green chillies 2
- Curry leaves 8-10
- Water cup 1/4 cup
For frying
- Prawns 250 gms (Shelled, deveined and washed thoroughly)
- Turmeric ยฝ tsp
- Chillie powder 1 tsp
- Green chillies 1 (slit)
- Curry leaves 8-10
- Salt 1 tsp
- Oil 2-3 tbsp
Instructions
- Grind together the ginger, green chillies and curry leaves along with salt and water to a fine paste.
- In a heavy bottom kadai/wok combine the ground paste with the prawns and let it cook on simmer for 5 minutes. The prawns will leave it’s own water, therefore, additional water need not be used here.
- Now add the turmeric and chillie powder. At this stage, please note that the oil is not added
- Then increase the heat and boil the liquid until it reduces completely. This may take another 2-3 minutes.
- When most of the liquid has evaporated, drizzle oil on the prawns and mix it well.
- At this stage add the curry leaves and slit green chillies. Mix it well. Give it another 5 minutes to fry and then switch off the fire.
Notes
1. Prawns become tough if overcooked.ย 10-15 minutes is enough to cook to a tender consistency.
2. It can be eaten as an accompaniment to dhal, pepper water or as an appetizer by itself.
