Poha

Ingredients

  • Beaten rice (poha) 1 cup
  • Groundnuts 1/4 cup
  • Fresh coconut (optional) ยผ cup (grated)
  • Coriander leaves ยผ cup
  • Curry leaves 1 stalk (chopped)
  • Sugar ยผ tsp
  • Salt ยผ tsp or according to taste
  • Green chillies 4-5
  • Lime juice 1 tsp
  • Oil 1 ยฝ Tbsp
  • Onions 2 (chopped)
  • Potato 1 small (chopped)
  • Cumin & mustard seeds ยฝ tsp each

Instructions

  1. Wash poha until the water runs clean. Drain water sprinkle a handful of clear water and keep aside.
  2. After 15 minutes loosen the poha gently, and break up the lumps. Keep it aside.
  3. In a kadai, heat oil, add cumin and mustard seeds. Allow them to splutter and then add the chopped potatoes. Stir for a minute.
  4. Now add the onions, green chillies and curry leaves. Stir and fry onions till tender and the potatoes are cooked.
  5. Switch off the stove. Add the poha and other ingredients. Save some coconut and coriander leaves for garnishing finally.
  6. Stir all the ingredients very well.
  7. Adjust salt and lime as per taste. Return to low flame till hot. Stir gently every now and then.
  8. Transfer to serving dish and garnish with coriander and coconut.

Notes

Serve hot with freshly brewed coffee
