Baigan Bartha
Ingredients
- Brinjals 750 gms (preferably big size)
- Jeera 1 tsp
- Onions ยฝ cup (chopped)
- Ginger 1ยฝ tsp (grated)
- Garlic 1 tsp (grated)
- Green chillies 1 tsp
- Tomatoes ยฝ cup
- Haldi powder ยฝ tsp
- Dhania powder 1 tbsp
- Garam masala ยฝ tsp
- Ghee 1 tbsp
- Coriander for garnish
Instructions
- Grease brinjals with little oil, make slits all over the surface and cook over an open flame till soft.
- Cool & peel the skin. Mash the pulp thoroughly and keep aside.
- Heat ghee and add the cumin seeds. When they crackle add the onions and sautรฉ for some time.
- Add ginger, garlic and green chillies, sautรฉ for some time.
- Add tomatoes, haldi, dhania powder and cook till oil separates.
- Add mashed brinjal, garam masala and salt and mix well.
- Serve hot garnished with coriander.
