Brinjal Sambal

Ingredients

  • Brinjals ยผ kg (cut into quarters & placed in water to which 1 tsp of salt is added)
  • Tomatoes 3 (roughly chopped
  • Curry leaves 2 stalks
  • Coriander leaves 1 bunch
  • Green chillies 3-4
  • Ginger garlic paste 1 tsp
  • Tamarind 1 small lump
  • Turmeric powder ยฝ tsp
  • Chillie powder ยฝ tsp
  • Onion 1 (roughly chopped)
  • Salt to taste ยฝ tbs
  • For seasoning
  • Onion ยฝ (sliced)
  • Curry leaves 1 stalk
  • Oil 2 Tbs

Instructions

  1. Cut all the above ingredients and put in a cooker with ยฝ cup of water.
  2. Let it cook for 2-3 whistles.
  3. Remove from the stove and leave for 5 minutes.
  4. Remove the cooker lid and churn the curry. Keep it aside.
  5. In a kadai add oil and after it gets hot, add the onions and let it fry till golden brown.
  6. Then add the curry leaves and let it fry for some time.
  7. Pour this seasoning on the sambal curry.

Notes

This curry taste very good with mango pickle.ย  Pappad is also a good accompaniment. Boiled egg is generally eaten with this curry.
