Dhal And Khaddu / Brinjals / Drumstick
Ingredients
- Tuvar dhal 1 cup
- Ginger-garlic paste 1 tsp
- Chillie powder 1ยฝ tsp
- Turmeric powder ยฝ tps
- Curry leaves 3 stalks
- Coriander (Kothmir) leaves Fist full
- Tomatoes 2
- Water 3 cups (to cook the dhal)
- Tamarind 1 fist full (Soak it beforehand)
- Khadu (bottle gourd) ยฝ (small)
For the seasoning
- Oil 1 Tbs
- Garlic pods 4
- Onion ยฝ (sliced)
- Curry leaves 2 stalks
- Cumin (Jeera) seeds ยฝ tsp
- Mustard (Rai) seeds ยฝ tsp
Instructions
- Add all the ingredients (except the tamarind) and let it cook for 4-5 whistles in a pressure cooker. Switch off the gas
- In the meantime, squeeze the tamarind and remove the pulp
- Cut the khadu into pieces and keep aside
- Mash the dhal with a masher (if it is not cooked, let it cook for 1-2 more whistles in the pressure cooker. Make sure there is enough water)
- Add the tamarind pulp and khadu. Add the salt too.
- Mix well and put to cook for just 1 whistles.
- Remove from the stove and keep aside. Let the cooker steam off in the meantime.
- Next, step is the seasoning of the dhal.
- For this put a small khadai/wok on the stove and add oil.
- When it becomes hot, add the onions & garlic pods and let it fry until light brown, then add the curry leaves, cumin and mustard seeds. When it begins to splutter switch off the stove.
- Add the seasoning to the dhal and mix well.
Notes
- Do not add salt to dhals while cooking unless the dhal is soaked beforehand.ย Add salt only after the dhal is cooked.ย This rule applies to cooking legumes (or grams) too. ย
- Do not open the cooker lid for sometime after cooking.ย The steam inside the pressure cooker helps to cook the dhal softer. ย
- Vegetables like brinjals, drum stick, gerkins (bilambi) or stew beams can be added to the dhal in place of Khaddu. ย
- Just one whistle is sufficient in case of brinjals or drum stick because it cooks up very fast. Other than that about 2 whistles are required for the vegetables to cook.ย
