Stew & Dumpling
Could be made plain or into dumpling by adding maida strips/ macaroni / noodles.ย Very easy to make, though the method typed below may seem lengthy.
Ingredients
- Meat / Chicken ยผ kg
- Onion 1 (finely chopped)
- Mint 1 handful
- Green chillies 3-4
- Tomatoes 2 (medium, chopped)
- Cardamom 2
- Cloves 3
- Cinnamon 2 sticks
- Ginger garlic paste 1 tsp
- Turmeric powder ยฝ tsp
- Oil 2-3 Tbsp
- Carrot 2-3 (cut into ยพ inch or a little bigger pieces)
- Radish 1-2 (cut into ยพ inch or a little bigger pieces)
- Stew beans 8-10 (cut into ยพ inch or a little bigger pieces)
- Cauliflower 1 small (cut into flowerets)
- Potato 2 (Cut into 4 or 8 pieces)
- Peas ยฝ cup (optional)
- Vinegar 2 tsp
Instructions
- Place a cooker on the stove and add oil. Add the chopped onions and fry for 1 minute.
- Add the ginger-garlic paste and let it fry for 1 minute on medium heat.
- Then add the mint leaves and green chillies to the onions. Let it fry for 1 minute.
- Then add the spices (whole, without powdering) and the turmeric powder.
- Add the chopped tomatoes and let it fry till it turns pulpy.
- Add the meat with 1 cup of water and let it cook for 4-5 whistles.
- Remove from fire and add the vegetables (except cauliflower). Let it cook for 2 whistle. Remove from fire and let out the steam from the cooker. If the steam remains in the cooker, then the vegetables will get overcooked with the steam. Add the cauliflower and let it go for one whistle.
- Add the vinegar and let it cook for a minute without the lid. Then switch off the gas.
For dumpling: Mix 1 cup of maida with a little salt in to a soft dough.ย Roll out into chapattis and cut into squares.ย While the vegetables and meat are boiling (without the cooker covered) add the cut maida pieces to the curry.ย As soon as you add the cut maida, do not mix.ย Let it be covered with a little gravy and boil by itself.ย Wait for 5 minutes, then add the other round of cut maida.ย Before adding this round of maida, mix the dumpling. Then place the cut maida as before with a little gravy to cover.ย Repeat the above process till all the maida is added for the dumpling.ย Do not dump all the maida together into the cooker, if not the maida will stick to one another and become a lump.ย Separate each piece and dump into the gravy.ย The gravy thickens gradually by adding the maida.ย You can add a little water if the gravy thickens too much.ย You will know when the maida is cooked when it becomes soft. ย
For macaroni : Boil the macaroni in enough water till it becomes slightly soft.ย Always add 1 tsp of oil to the macaroni while boiling in order to avoid sticking.ย Add a little salt as well.ย After cooking drain the water.ย Add the drained macaroni to the boiled vegetables and meat gravy and let it simmer for 5 minutes.ย This is the easiest way of making dumpling.ย The similar method can be used for noodles.
