Tomato Rice
Ingredients
- Rice 2 cups (Washed and soaked for ยฝ hour)
- Cinnamon 2 pieces (1 inch)
- Cloves 3
- Cardamoms 2
- Onion 1 medium (sliced)
- Green chillies 2-3 (slit)
- Pudina 1 hand full (chopped)
- Kothmir 1 hand full (chopped)
- Ginger-garlic 2 tsp (paste)
- Tomatoes 4-5 medium (chopped)
- Oil 2 Tbsp
- Ghee 2 tsp
- Salt to taste
Instructions
1. Add oil & ghee to cooker. Please see note below in case you are not using a cooker and cooking it in a vessel.
2. After it heats up a little, add the sliced onions. Let is fry to light brown.
3. Add spices and then ginger-garlic paste. Allow it to fry for a minute.
4. Add the green chillies, pudina, kothmir. Let it fry for a minute.
5. Add the tomatoes and salt to taste. Let it fry well, till it becomes pulpy.
6. Add water to the fried ingredients (1ยพ :1 ratio for water and rice).
7. Let the water come to a boil. Drain out the water from the soaked rice. Add the rice to the boiling water (lower the heat till the rice is added).
8. Cover the cooker and let it cook for 2-3 whistles.
Notes
Go through all the above steps. At the stage of adding water, maintain a ratio of 1ยพ:1 (water:rice)ratio if the rice is being cooked in a vessel other than a pressure cooker.
