Vegetable Pulao
Ingredients
- Basmati rice 1 cup (ordinary rice can also be used)
- Cauliflower 100 gms (medium size florets)
- Potatoes 1 (cut into cubes)
- Cinnamon 2 sticks
- Cloves 4-5
- Cardamom 2
- Black pepper 6-7
- Bay leaves 2
- Thinly sliced green chillie 2
- Thinly sliced onions 1
- Vegetable oil 4 tbsp
- Garam masala powder 1 tsp
- Salt to taste
Instructions
- Heat 1 tbsp. oil in a pan. Fry bay leaves, cloves, cinnamon, black pepper for 1/2 minute on medium heat.
- Add thinly sliced onions, green chillies and fry for a minute. Keep this aside.
- Take rest of the oil and fry all the vegetables for 4-5 minutes. This adds taste to pulao.
- Add paste of coriander leaves, green chilli and ginger to it.
- Add the fried onions, garam masala and salt. Stir and then fry it for 5 minutes.
- Add water (slightly more than 2 cups โ double the quantity of rice measure).
- When the water begins to boil, then strain the soaking rice and add it to the boiling water (Lower the flame at this stage). Once the rice is added, increase the flame.
- Cook in the pressure cooker for 2 whistles.
